Head Chef: Charné Pressley

Hacklewood has just reopened and we are more than excited to pair our fresh look with a fresh menu. A few months ago we introduced the lovely Charné Pressley to you as our Executive chef and are thrilled at what she has been creating in our kitchen.

Trained in culinary arts at TCA on Backsberg Wine Estate, Charné is perfectly qualified in the art of gourmet food and wine pairings. Not only does she combine the basic knowledge of food and wine in her pairings but she produces her own elegantly crafted dishes to complement their wine counterpart. This being said, our Hacklewood already has three food and wine pairings scheduled throughout the month of August, for your enjoyment.

Charné is a local girl who enjoys sourcing new, local products to inspire her creations. In fact one of her favourite creations, and certainly one of ours, is an Amarula and Chocolate Parfait. When asked about her preference for gourmet food and dinning, Charné swiftly answered ‘It’s like art on a plate’. Fuelled with a passion for art, Charné’s inspired style is often a combination of bright colours and an amalgamation of eclectic textures. Introducing new slate plates to Hacklewood’s crockery collection was sought to bring Charné’s simple, chic and abstract works of art to life.

Hacklewood’s kitchen offers Charné and her dynamic team the freedom to create extraordinary dishes and also allows them the time to give each dish the attention to detail that it deserves.

With such incredible talent labouring away in our kitchen it is no surprise that we have been awarded with American Express Fine Dinning Awards for 2 consecutive years. We are incredibly proud to be associated with such a hard-working, talented and enthusiastic team and are anxiously awaiting their next creation.
