Head Chef Tebogo Molelekoa

Chiefs Boma Head Chef, Tebogo Molelekoa is a born & bred “Kimberley boy” whose love for cooking started at a young age. “My mom is a brilliant cook” says Tebogo with a sparkle in his eye as he recalls childhood favourites, “so it was natural for me to learn from her – she loved having my sister and me in the kitchen which was filled with laughter and chatter as we helped prepare the family meals”.

His infectious laugh bubbles over as he remembers that his Granny put him in charge of Sunday Lunch when he was “just a youngster” as he chose to stay home and cook instead of going to church ensuring a wholesome meal for the family on their return.

After finishing school, Tebogo headed for the “big city lights” where he began working as a waiter at Caesar’s Palace, but soon found himself as part of the Banqueting Kitchen Brigade. Following a short stint in the Banquet Kitchens, this ambitious young man decided to make food his career and enrolled in the Hilton Hotel Chef’s Academy 4-year Training Programme where, soon after qualifying, his passion for food saw him land a much sought after position with the Five Star Michaelangelo Hotel. Tebogo honed his skills amongst the finest Chef Mentors in South Africa before joining The Grace as a Sous Chef where he was responsible for the banqueting and fine dining kitchens of this well-known luxury Boutique Hotel.

When The Grace closed her doors, this talented chef joined Air Chefs where he was responsible for the 100’s of 1st class, business class and coach meals prepared daily – a challenge which he thoroughly enjoyed. Tebogo joined the Indaba Hotel,Spa & Conference Centre in 2016 as the Head Chef of the award winning Chiefs Boma Restaurant and the popular Mowana African Spa and has brought big hearty flavours and a quirky sense of humour to the Boma menu, whilst uplifting the Mowana Spa Meal offering to a fine dining level enjoyed by our discerning spa patrons.

Tebogo’s signature dish is his Lamb Shank – he loves the slow cooking method & intricacies of layering the flavours of this South African favourite whilst ensuring that the meat is “fall off the bone” tender – lip smacking good food. Whilst Tebogo loves experimenting with unusual flavours, his absolute favourite comfort food is old school Tripe & Dumplings or his Wife’s Roosterkoek made on the open fire which he animatedly describes as “a taste of heaven”
