The passion in the heart of the kitchen in the Protea Hotel Fire & Ice! Melrose Arch’s old Hollywood-style restaurant is Executive Chef Vincent San, whose fusion-inspired creations will sway event the harshest food critic.
Perspex-encased chandeliers and silver dining chairs set the glam tone in the trendy restaurant that is as famous for its gourmet designer burgers as it is for its Springbok shanks, slow roasted in spicy yoghurt and served with Malay prune rice. One of Chef San’s favourite dishes on the extensive menu is the Marakesh Express, a three-way Moroccan cheese starter served with fresh melon and preserves, that create a flavour burst on your taste buds. But a main course must is to try one of the beef, lamb, ostrich, chicken, fish or vegetarian burgers that are a legend in their own time and said by most to be the best in Jozi.

A winter favourite in the restaurant is to tell the server: “Save my bacon!” The quirkily titled dish comprises rib-sticking pork rashers slow-cooked in a rich black bean sherry paste, served with jasmine rice and pickled cucumber. And if pork belly is your delight, the only way to finish off your thoroughly decadent meal is with the Sweet Fudgenator – a hot fudge pudding dripping in fudge cream. Chef San also highly recommends the Lindt-2-Rumba as a belly-warming winter dessert; an infusion of dark rum and Kahlua Lindt tiramisu served with vanilla bean ice-cream.
The restaurant is located on the first floor of the Protea Hotel Fire & Ice! Melrose Arch on the corner of Whitely and High Streets in the trendy Melrose Arch lifestyle precinct in northern Jozi.

Take the R24 towards Johannesburg. Follow the N3 North to Pretoria at the Gilooley’s interchange. Follow the M1 South to Johannesburg, at the Buccleuch interchange take the Corlett Drive Off ramp. Turn right at the end of the off ramp. Turn left just after the BP garage on your left, into Melrose Boulevard. You are now in the Melrose Arch Complex.
Parking: When entering the Melrose Arch Complex, carry on straight, until you find Parking Entrance 1 on your right, Edgars/Woolworths Entrance at the 3rd traffic light.* Keep right, carry on straight through the ticket boom until you reach the T-junction. Turn left and carry on straight. Before reaching the next ramp, turn left, where you will see the Hotel elevator on the far right.
Coming from the M1 South towards Pretoria, take the Athol Oaklands off-ramp. Turn left at the traffic lights, then turn right at the 3rd set of traffic lights, into Whitely Street located in the Melrose Precinct. The Hotel is now situated on the right hand side, corner High & Whitely streets.
Parking: Carry on straight (pass the hotel) until you reach the T-junction. Turn right into Melrose boulevard. Turn right into the Edgars/Woolworths Parking entrance 1 at the first traffic lights. * Follow directions to hotel as above.
