As with many things in life, restaurants are all about balance. This, Rust en Vrede understands and with this believes that their service is as important. What makes it even more of a challenge is when all this happens on a historic and award winning wine estate.
So how do they go about achieving this perfect balance? They select the right team and together they build from here, to create the finest dining experience at a world-class venue. The original cellar, a National Monument, has been converted and the kitchen is placed “front and centre”, thus allowing the guests to see the chefs in action!
John Shuttleworth discovered his passion for cooking at the early age of 13 when baking bread with his grandmother. John has been working in the food industry since he was a teenager. After graduating from Derby College in the United Kingdom aged 19, he started his professional career in the USA for one year. John then returned to England and started working in various Michelin starred establishments in England and Scotland. Relocating to South Africa in 2008 with his wife Andrea, he joined the Rust en Vrede team as a sous chef in 2009 under head chef David Higgs. In 2011, the opportunity of a life time was presented to John when David recommended that John would be the ideal candidate to continue David's legacy.
The style of food is based on classical French combinations and techniques with modern influences and playful twists. Chef John Shuttleworth constructs the menu to remain in-keeping with the classical feel of the restaurant whilst also exploring and showcasing some of the modern innovations in today's gastronomic world. Our chefs source the finest produce ranging from our free range chickens and freshly picked mushrooms to the finest chocolate. He is joined in the kitchen by Fabio Daniel, Jean Delport, Sone Jacobs and Katlego Mlambo. The front of house is run by Andrea Shuttleworth along with sommelier Joakim Hansi Blackadder.
Joakim Hansi Blackadder began his career in the industry doing a Hospitality programme in Leksand, Sweden, followed by the Sommelier Education from the Restaurangakademien in Stockholm. He worked for two years as part of the Restaurant Mathias Dahlgren team during which time the restaurant received the coveted two Michelin stars. Joakim relocated to South Africa in 2008 to join the Relais & Châteaux affiliated Grande Roche Hotel in Paarl. From there he moved to The Roundhouse Restaurant in Camps Bay where he also acted as General Manager. In November 2011, Joakim received the first South African Bollinger Exceptional Wine Service Award. In March 2012 Joakim joined Rust en Vrede as their Sommelier and will assist guests in navigating our extensive wine list.
Being part of this progressive wine estate and working closely with the winemakers they have selected a unique wine list. Not only does it comprise of wines that they personally selected, but also includes wines from around the world. Other than their love and commitment to red wine, they are known to occasionally indulge in Champagne... well, actually everyday - hence the selection on offer. Rust en Vrede offer an impressive line-up of over 15 different champagne houses, with an ever changing selection offered by the glass, that are not easy to come by. And on top of this the restaurant has taken pride in hand-selecting the international wines.
A shuttle service is available on request to and from the Estate at an extra cost and needs to be booked in advance.
From Cape Town (N2):
Take N2 towards Somerset West and then turn left off N2 at first Stellenbosch sign R310 (Baden Powell Road). Continue on this road until traffic light at Lynedoch and then turn right at the traffic light onto Annandale Road. Stay on Annandale Road, cross over the R44 and continue straight until you reach a security gate. Once through the gate continue straight, Rust en Vrede the last property on the Annandale Road.
From Cape Town (N1):
Take N1 towards Paarl and then take R304 off ramp towards Stellenbosch. From Stellenbosch take R44 towards Somerset West. Travel 5kms outside of Stellenbosch at the Mooiberge Farm stall traffic intersection and then turn left onto Annandale Road. Continue straight until you reach a security gate. Once through the gate continue straight, Rust en Vrede the last property on the Annandale Road.
From (Franschhoek) Stellenbosch:
From Franschhoek travel to Stellenbosch on Helshoogte Road and from Stellenbosch take the R44 towards Somerset West.
