Ever heard of Liquid Nitrogen Boiled Icecream and Drain Cleaner Poached Pretzels? Chances are you might be thinking of the British Molecular Gastronomy Chef Heston Blumenthal as seen on TV. Well, Durban can now boast of its own Molecular offering – in the form of Culinary duo Chefs Shaun Smith & Caryn England who host Fusion World Food Café in the ever-vibey Silvervause Centre on the Berea.

Shaun, ex-regional chef of Woolworths, and Caz, ex-Executive chef of Quarters Hotel, are also co-principals of their chef training and lifestyle evening class school based in Westville North. Fusion World Food Café is a natural extension of their world renowned chef school, The Fusion Cooking School, where their global, trendy, modern, health-conscious cuisine showcases the very best of world food flavours with strong Asian influence & elements of molecular gastronomy (as Shaun & Caz have even demonstrated on TopBilling on TV).

 

This unique and highly innovative establishment, is run by a passionate and dedicated team of principals, lecturers, past and present students from The Fusion Cooking School, and is famed for truly unique offerings such as super-tender beef fillet cooked in a dishwasher, soups that change colour as you eat them, pretzels poached in caustic soda, flambéd malva pudding, 16 hour electric-blanket-slow-cooked oxtail, and liquid nitrogen ice cream created tableside in front of your very own eyes!

Vegetarian, Venison & Fish dishes also feature strongly on the menu, as does Tappas in nibbles of small bites to their mantra "A Whole New World of Flavour!"

 

Their extensive Dinersclub Platinum award-wining winelist also offers a range of Wine by the Glass. There are also a large range of artisanal beers, cocktails, brandies, whiskies and single malts to choose from. Half-price cocktails on Tuesdays even include a range of ‘Dangerous cocktails’ and once a month they host a Venison Supper Club and Gourmet Wine Evenings.

In 2013 Fusion was awarded a Blazon (a large brass plaque) by the Chaîne des Rôtisseurs for being a dining establishment that maintains a superb level of cuisine, service and hospitality, as required by the exacting standards of Chaîne des Rôtisseurs internationally. Only 3 establishments in Durban hold this prestigious award – the other 2 being top 5 star hotels. Both Chef Shaun and Chef Caryn also hold the rank of Maître Rôtisseur in the Chaîne des Rôtisseurs.
