Owners of Carbon Bistro, Reinhardt Paulsen and Nicky Hesler established the eatery after spotting a gap in the market for a trendy, upmarket restaurant in Brooklyn. The duo aims to share their passion for exceptional cuisine, wine and craft beer, offering a unique dining experience to their guests.

Diners who enter through the doors of Carbon Bistro are warmly welcomed by a team of dedicated staff. Guests can take a seat inside, while marvelling at the contemporary and clean décor and furnishings. Individuals looking for a casual dining experience can enjoy some fresh air and a refreshing beer on the outside terrace.


All dishes prepared by the eatery’s reputable chefs comprise of locally sourced produce, in support of independent South African businesses. Meat-lovers can devour Wagyu beef and prime cuts, while vegetarians are treated to fresh and innovative meals.

For after work drinks enjoy a pint of your favourite craft beer accompanied by some bite-sized treats. To sate the hunger pangs before dinner, nibble on some jalapeño poppers, or some sweet and spicy chicken wings.


The ‘Artisan Dipping Board’ is the perfect snack for sharing. This meal is served with a fresh baguette and a miscellany of dips and trimmings – think beetroot hummus, sundried tomato pesto, olive tapenade and crumbed mozzarella balls.

Tantalise your taste buds with a deconstructed steak tarter, this flavoursome appetiser is the perfect introduction to an evening spent at Carbon Bistro. If you’ve got a sizeable appetite, opt for the 250gr slow smoked brisket. The 12-hour smoked steak is served with a bordelaise sauce, and a side of mashed potatoes, roasted vegetables, shoestring chips, coconut rice, or a salad.




Directions via N1 and Rigel Avenue/M9 (This route has tolls)
Follow N1 and Rigel Avenue/M9 to Kloof Avenue. Head south on N1 (Toll road). Take the R50 exit and keep right at the fork. Follow signs for M9/Erasmusrand/Rigel Avenue and merge onto Delmas Road/Rigel Avenue/M9/R50. Continue to follow Rigel Avenue/M9.

Continue on Kloof Avenue and take Tram Street to Dey Street. Turn right onto Kloof Aveue and go through 1 roundabout. At the roundabout, continue straight onto Tram Street and turn right onto Bronkhorst Street. Turn left at the 1st cross street onto Dey Street. Carbon Bistro will be on the left.
