Fondly known as Billy, Chef Gallagher is credited with coining the term ‘rainbow cuisine’. Throughout his decorated career as a gold medal-winning chef, Billy’s passion has been training young chefs and ensuring that South African chefs are given the same opportunities and exposed to global standards, making it possible for South Africa to become a world-class tourist destination. Through his involvement over the last 35 years in the South African Chefs Association and the World Association of Chefs Societies, of which he is Honourary Life President, as well as through his position as F&B Director of Southern Sun for over 25 years, Billy has touched the lives of hundreds of chefs and, through them, thousands of South Africans who have enjoyed the fruits of his contribution to the industry on their plates in hotels and restaurants around the country.
