Resort Executive Chef Chris Mare

Chris Mare, Resort Executive Chef at One&Only Cape Town, has been working his way up the local culinary ranks since the age of 15. Having grown up in the small fishing town of Saldanha Bay in the Cape’s West Coast region, Mare began his journey in the industry earning extra pocket money as a waiter at a local restaurant called the Laughing Mussel.

He soon progressed to assisting in the kitchen, and after a fortunate encounter with the general manager of Saldanha Bay Protea Hotel, Carl Van Der Linde, Mare began to work weekends at the Protea Hotel kitchen instead, which continued until the end of matric. Post high school, Mare enrolled fulltime into the Protea Hotel’s Service Chef course which lasted 3 years instead of 4 as a result of him being exempt from the orientation year. This being due to his already extensive experience. He further went on to complete his exams at the Granger Bay Hotel School.

While an early start in hospitality influenced Mare’s journey into cooking, his love for food began as a family affair. “We always cooked together, trying new recipes… whether is was successful or failed horribly it was always exciting and fun to do as a family”, recalls Mare. This is an ideal Chris is proud to have continued well into his professional career, as he continues to liken his team dynamic to that of a “family” working together to wow guests. His food philosophy is simply “a person cannot think well, love well or sleep well if they have not dined well”

Hardworking and dedicated himself, Chris is inspired by some the culinary greats such as Garth Stroebel and Marco Pierre White, noting “…they show that with passion and love for cooking you can reach any heights and leave a legacy that all other chefs will look up to and aspire to”.

During his noteworthy nineteen-year career, Mare has worked in some of South Africa’s top hospitality establishments including Oyster Box Hotel and Fairmont Zimbali in Durban and 12 Apostles Hotel and Spa and On19 at the Westin Hotel in Cape Town. With his positive attitude and approach to teamwork as a “family affair”, Mare has led his kitchens at numerous restaurants to award-winning status.

Having joined One&Only Cape Town as Chef de Cuisine in 2016, Mare’s rapid journey through the ranks of the One&Only culinary team to Executive Sous Chef in 2017 and then Resort Executive Chef in 2018 is testament to his sincere and continued commitment to his craft.

In his current role as Resort Executive Chef, Chris showcases his vast experience, skill set and talent for creating refined and flavoursome dishes across the resort’s food and beverage outlets. In October 2019, One&Only Cape Town introduced their new signature restaurant, Ochre. Chris, together with his team, worked tirelessly to create a menu which reimagines age-old South African recipes using local ingredients and fresh, seasonal produce. The result is a contemporary South African menu filled with intrigue, creativity and rich cultural influences – and another great achievement for this esteemed local chef.
