NOBU MATSUHISA

With an empire that spans the breadth of the globe, Japanese master chef Nobuyuki ‘Nobu’ Matsuhisa has established himself as one of the world’s truly great chefs. His first restaurant in Africa at One&Only Cape Town is a sophisticated excursion into the world of fine Japanese cuisine. Serving mesmerizing oriental fair made from fresh local ingredients, Nobu also offers diners a selection of the finest sakes to pair their dishes with. And true to his signature style, he adds a contemporary South African twist to classic dishes, resulting in a truly memorable dining experience.

Born in Japan, but having lived and worked in Peru, Nobu began to incorporate Southern American ingredients into traditional Japanese dishes, so creating an individual style of cuisine; classical Japanese cuisine with a contemporary Peruvian twist and diners to Nobu restaurants throughout the world have come to expect the same high standard of innovative Japanese cuisine with the addition of specific local flavors. So ensuring that, having eaten at one Nobu, in say, Beijing or Budapest, gourmands will still find something new and special to try when jetting into Moscow or Milan.  Nobu One&Only Cape Town is no exception. It is regarded as a high-end restaurant, but the perception that it’s only meant for very special, formal occasions is incorrect. It is a sophisticated restaurant with an informal atmosphere. From the moment when diners are welcomed with a chorus of ‘Irasshaimase!’ – the traditional Japanese welcome, diners know to expect the unexpected.  Here, miso soup can make its appearance at the end of the meal, and fresh sushi can arrive somewhere in the middle.

While dishes such as crab leg tempura with ama ponzu has a spicy bite, usually not found in classical Japanese cuisine, and Peruvian style beef skewers will be served alongside Namibian Rib-Eye Anti Cucho. And the freshest sashimi will be followed by a Malva pudding will be served with Calpis and pineapple ice-cream.

Enjoy the special tasting menus if you are disinclined to make too many decisions, or if you’re in the mood to try anything and everything, and you’ll want to, go with a group and order many dishes to share. And if time is limited, but you want that Nobu fix, visit the Nobu Lounge on the upper level of the restaurant, where the happy voices and laughter of contented, inspired diners will prove to be the perfect accompaniment to a goblet of premium sake or one of the huge variety of sake cocktails on offer.
