Executive Chef - Jacques Fourie

From humble beginnings on garlic farm in the North West province to Executive Chef in some of South Africa’s finest dining establishments, Jacques Fourie’s passion for creating taste experiences has resulted in a career that has placed him as one of the most versatile and exciting chefs in the country.

He studied at the Swiss Hotel School in Mmabatho achieving distinctions in 1997 under the highly professional and rigorous tuition of internationally professionals. Once qualified, Jacques honed his skills in esteemed establishments such as The Royal Hotel in Durban, The Palace at The Lost City (Sun International), Singita Game Lodge (owned by Luke Bailes), 8 at the Michaelangelo Towers and is now the owner of Licorish Bistro restaurant in Johannesburg. In addition he opened a consulting company to train young South Africans in a variety of culinary skills including the art of mixology, the science of creating the perfect beverage, including cocktails, as well as knowledge and understanding of coffee and wine pairing.

This serious commitment and passion to create a holistic taste experience is evident in his versatile style of fusion food influenced by South African, Asian, European and continental African flavours. Jacques’ ongoing drive to uncover and combine new flavours has resulted in him working in London as well as recently being the Head Chef for the South African events at the World Economic Forum in Davos, Switzerland in 2008 and 2009.
