Chef Lamek Mnisi

The menus at Kunjani is curated under the watchful eye of Head Chef Lamek Mnisi, who has been at the helm of the Kunjani kitchen since it’s opening in November 2017. Not only does he look for high quality ingredients and innovative ideas when creating this season’s menu, but he continually renews the menus so that regular patrons always find a new dish that will surprise them when visiting Kunjani.

In line with his philosophy to only source seasonal ingredients and the very best fresh produce, Lamek has streamlined the menus to reflect his passion for locally sourced, fresh, wholesome and healthier food options that are also sustainable. By sourcing only locally grown produce, he aims to act responsibly towards the planet and its natural resources and reduce Kunjani’s carbon footprint.  As a result, he only sources fish from the green list of South African Sustainable Seafood Initiative (SASSI) and fresh vegetables from the restaurant’s own vegetable garden.

Here is Lamek’s story:

“I was born in Mpumalanga, in a small village named Hluvukani, situated close to the Kruger National Park. Raised by my strong and independent, single mother, I passed matric and immediately started to work. My first job was a gardener, which I never enjoyed very much. I then became a tracker in the Kruger National Park. Whilst working there, I heard of the Singita Community Enrichment Program through the Singita School of Cooking.”

“I was chosen out of 200 candidates to participate in a three-part interview. The first was a verbal interview, the second was about kitchen knowledge, and the third was a cook-off, held between the remaining 30 candidates where we were left to cook something we loved. To think my lifelong career started with a humble “crunchie” recipe that went on to gain top points on the final day! Approximately 18 months later I was a qualified young chef, selected to remain at Singita where I advanced my skills and experience in fine dining for the next 7 years.”

“In 2013, love found me in the remotest part of the Kruger National Park and so I embarked on my journey to Cape Town, which lead me to my new family: Kunjani Wines.
