Chef Profile: Sanjeen Ramsuroop – HLM’s Executive Chef at Sibaya Casino and Entertainment Kingdom
Hometown: KZN, Durban
Work experience: I trained at Blues restaurant in Camps Bay; Cape Town and then moved to the beautiful Prince’s Grant; the Lodge before heading back to Durban to work at Sugar mill casino. I was part of the opening team that facilitated the memorable opening of Sibaya in 2004. After a two year stint at the Hilton hotel I travelled abroad to New Zealand to the Rotorua district to work as executive chef at the Sudima group of hotels. Rotorua was filled with the fascinating Maori culture and this is where I learned authentic Maori method of cooking called the Hangi, where food is cooked using hot stones and natural thermal heat from beneath the ground from volcanic activity.
Studies: I studied my National diploma in catering management at DUT and was lucky enough to be sponsored by Sun International to study my degree in Food Service Management. Currently I am pursing a master’s degree in Food and Beverage.
Tell us about your current menu: Our special and unique Sibaya clientele inspired me when creating the menus at Sibaya. Over the years I have got to know the guests on a personal level, and I have taken their likes and dislikes into consideration as well as incorporating the best quality and freshest produce available.
What is your favourite dish on your menu: The butter chicken in the MVG Indian delights restaurant, it is my own recipe that I learned from other North Indian chefs I have worked with abroad.
Hobbies: My Favourite is my fishing; I enjoy being out in nature and catching my own fresh fish and cooking it up.
Family life: I try to balance family and work life. I have a wife Ronika and two young son’s Umang and Pranav that are the light of my life.
The high lights:
I enjoy cooking for celebrities with their unique tastes and dietary requirements. I have had the pleasure of cooking for Prince Albert and his wife, Johan Cena, Enrique Iglesias, Janet Jackson, rapper Ludacris and the Manchester United Football club while they were in South Africa, to name but a few.
