The Werf Restaurant:

Headed up by Executive Chef Christiaan Campbell, who is passionate about ethical and sustainable food production and being aware of what you eat, The Werf Restaurant is the ultimate expression of this philosophy. With the 2.5 hectare kitchen garden which continually produces organic veggies, fruit and herbs, seasonal and freshly produced ingredients drive the menu.
Picture The Werf Restaurant @ Boschendal in Franschhoek, Cape Winelands, Western Cape, South Africa Diners start with a course of artisanal breads baked daily on the premises followed by an a la carte menu which might feature a selection of well-dressed seasonal salads, a short continuously changing menu of starters, mains and dessert, all of which star fresh ingredients in unexpected combinations.

Christiaan makes substantial use of two ancient techniques now back in vogue – smoking and fermenting. Recently, diners relished a starter of smoked chicken, tree tomato, jelly and fermented cream, while more conventional tastes savoured free-range farmed Angus beef in a flavourful combination of flat rib, bone marrow and broth.
