It all started in 2003 when Wouter and Deleen Lindeque moved to a land far, far away from sunny South Africa. There they had three beautiful boys and spent a decade sampling cuisine from all over the world. This lead to them to the discovery of smoked meat from the star-spangled country, a delight rarely experienced in South Africa up to now.
Their love for good meat, combined with a deep passion to prepare food and entertain resulted in them mastering the art of low&slow smoked meat, thus PitMasters was born. The PitMasters passion is to popularize low & slow smoked meat or also known as Texas BBQ in South Africa.
After operating their food truck for more than two years at major events and festivals in and around the Western Cape, they have now also opened their first brick and mortar restaurant on Woodbridge Island in Milnerton.
Preparing Texas style BBQ involves cooking it for long periods of time over indirect heat at low temperatures with smoke from a wood fire; the facility for cooking the meat is known as the barbecue pit and the person operating it is the PitMaster. This form of cooking adds a distinctive, smoky taste to the meat.
All PitMasters meats are smoked in authentic Texas offset smokers over grape vines and oak wood for up to 20 hours. Each meat cut is liberally rubbed with the secret dry rub before hitting the BBQ pit.
Unlike cold smoking, where the items being smoked are not cooked, with BBQ the meat is fully cooked until very tender and has a unique smoky taste. This meat is then served in various forms, from sliced or pulled with a homemade BBQ sauce.
Travel from Cape Town on the F W de Klerk Boulevard/N1 towards Milnerton. Take exit 4 for R27 toward Paarden Eiland/Milnerton/Table View/West Coast and continue onto Marine Drive/R27. Turn left onto Loxton Road/Woodbridge Drive and continue to follow Woodbridge Drive. PitMasters will be on the left at the Milnerton Lighthouse.
